Well hello there ! I ’ve been engaged this weekend with my ferments , one of which has to do with cattail shoots . After wecollected a good bunch of cattail shootsa couple of weeks ago I could n’t quite decide what to do with them . When eaten raw they taste similar to fresh cucumber vine , which made me call up of pickle . Joel cooked some up with butter and they were delicious , but once I got mess in my head I could n’t suppose of doing anything else . So , of course , I made fermented cattail shoot !

Fermented Cattail Shoots Recipe
The first step in the process is to goforaging for cattail , and spring is the best clip of year to do it . I ’m sure you have a patch somewhere near you .
Once you have collected and process your shoots , it ’s a evenhandedly simple process to get them work .
First cut them into smaller pieces and put them into a jolt . I require to do a little batch , so I used a quart size of it jar .

I decided to add some radish to the mix because I had a plethora of them , and some ail because I always add garlic ! Also dill and mustard seeded player .
insure the veggies with a seawater of 3 tablespoon kosher or pickling salt ( not iodise ) per dry quart of water . The cattail really require to float !
I contacted my friends atFerment Worksabout this character of unrest , and Kirsten suggested that I tote up some already fermented saltwater to help get it going .

I had somekimchiin my fridge , so I added a few tablespoons of its spicy saltwater as well . Then I put a weight on top to keep everything submerged .
I used my handy little exercising weight ( the one I have does n’t be any longer , butthese ones wait sound ) . But you’re able to use whatever you have , even a fictile naught top bag filled with brine ( in case it leaks ) .
Then cover the jarful with a towel and let it seat in a coolheaded , dark station . Check it every few days to make certain the veg stay under the saltwater and that no mildew is shape . A thin level of white stuff and nonsense is ok , you just want to avoid anything greenish or disgraceful .

After 2 weeks mine reckon like this :
The radishes lost their beautiful color and everything was a little champagne , but it savor terrific !
It would be a great topping for a salad , or as part of an appetizer platter . I ’m always stunned by how wonderful home base turn veggies are !

forage for veggies then ferment them is such a born summons . It really palpate like what we are supposed to be doing . Eat what you could fresh , then preserve the rest for a later meter .
Fermenting is one of the best ways to do this because of all of the healthy bacterium for your bowel . Not to mention these turn cattail shoots are crack tasty !
More Fermented Vegetables
While they might not be as maverick as Fermented Cattail Shoots , these other fermented vegetable formula are just as levelheaded and tasty !
