Serves 8 to 10

Fruit:4 firm , advanced pear tree , peeled if want , cored , and sliced into poop lengthwise1/2 lemon2 cups tonic or fixed cranberries2/3 cupful packed light brown sugar2 tablespoons unbleached flourZest from 1 orange15 to 20 orange - scented geranium leave , optionalFreshly grated Myristica fragrans
Crumble Topping:1/2 cup uncolored flour1/4 cup whole wheat flour1/4 teaspoonful salt8 tablespoon unsalted butter , cold , cut into bits1 cup chocolate-brown lettuce , not packed1 cup rolled oats2/3 cupful coarsely chopped walnuts or pecans
Pears and cranberries are a favorite fall combination ; both are delicious when compliment by the flavor of orange . I wish to use my fresh herb to add perfume and flavor to seasonal desserts . If you do n’t have orange geranium folio , orange mint would work well . Rosemary or sage leaves could also be used — I’d use about 8 to 10 branchlet of rosemary about 1 - 1/2 inch long and remove them before serving or about 12 to 15 whole salvia leaves .

Bake in a preheated oven for 30 to 35 minutes , until the crumble is gilded brown and the pears are tender when stuck with the tip of a knife . nerveless on a baking rack for at least 15 instant before serving . dish out hot , warm , or at room temperature . ou can remove the herb leaf if desired , I in the main leave them in the dessert , but do not eat on them ; just discourage your guest if you do so .
