A California vacation at apricot ( and peach ) clip : aaahhh . We can manage goodpeachesin the Hudson Valley , but our apricot season is about 30 second . While in Northern California , we bought and ate them by the quart . fast , sweet , sourish and juicy , the apricots were everywhere , and we indulged .

But 10 days of being away from our garden signify come home to a bunch of changes . I ’d lack a oestrus wave , but the peas , lettuce andfava beanshadn’t . Basil - Scented Panna Cotta with Basil - Poached peach

The Panna Cotta :

INGREDIENTS

whisk off the gelatine into 1/4 cupful of cold milk in a small genus Pan . Then excite it as it soften and heat it over low heat until it break up . Do not seethe . conjure in the basil leaves and the rest of the milk , ointment and sugar , conjure up until the mix just scald . Strain the mix into a bowl , and whip in the vanilla extract or orange flower water . Set aside until just warm ; then arouse in the yogurt . This score one bombastic panna cotta or six 4 - oz. ramekins . Chill until it sets .

The Apricots :

Combine piss , cabbage , and honey in a medium saucepan . convey to a boiling point , stirring occasionally to assist bread unfreeze evenly . sum apricots , reduce heat to medium and poach for 2 to 4 minutes or until soft but still intact . Garnish with a sprinkle of basil blossom .
